This recipe is such a good way of making a lovable meal healthier; in this case by using the tasty vegetable of pumpkin! It is also super easy as the bases use a total of 4 ingredients and the method is quite straightforward. The only negative of this recipe is that it is quite time consuming, but since a lot of it is waiting for things to cook or cool, you can easily do something else while you are waiting. This recipe is heavily inspired by Niomi Smart’s cookbook ‘Eat Smart’, but I altered it according to what worked best for me 🙂
Ingredients: (makes 2 pizzas)
- approx. 1kg pumpkin
- 4 tbsp linseed/flaxseed
- 8tbsp water
- 250g flour (buckwheat or plain is preferred)
- your desired pizza toppings (I used tomato paste/water, onion, mushroom, spinach and cheese)
1. Remove the seeds from the pumpkin and peel the skin off. Chop into small chunks.
2. Place the pumpkin into a pot, cover with hot water and bring to the boil. Then turn down to a medium heat and cook for about 15 mins or until soft. Drain the water thoroughly.
3. Mix the linseed/flaxseed with the water in a small bowl and leave for a few minutes to thicken.
4. Transfer the pumpkin to a large bowl and mash with a fork. While you wait for it to cool, preheat the oven to 180 degrees Celsius.
5. Add the linseed/flaxseed mix and flour into the bowl with the pumpkin. Combine everything until it is thoroughly mixed into a dough. The dough will be very sticky, but it will harden in the oven.
6. Line two trays with baking paper and transfer half of the mixture onto each tray. Spread out the mixture using your hands or the back of a wooden spoon. Once satisfied with the thickness and shape of the bases, place into the oven and cook for about 30 mins or until lightly brown and crisp round the edges.
7. During the cooking of the bases, prepare your toppings. For me, this involved cutting the onion and mushrooms, mixing the tomato paste with water and getting out the cheese and spinach.
8. Let your bases cool for a bit and then lift them off the baking paper to ensure that they are not stuck to the paper. From my previous attempts, it is definitely easier to remove stuck bases without the toppings on!
9. Arrange your toppings onto the pizzas. Cook for about 10 mins, although it depends on your toppings.
10. Leave to cool and then transfer to plates. Slice and enjoy!
